I have made Cauliflower pinwheel gravy,
Inspired by Chef Shiddharth dish. I have used all ingredients which is used by chef. It is really something new for me to make a roll from cauliflower.
Ingredients and spices that need to be Prepare to make Cauliflower Pinwheel Gravy in Awadhi Style:
- For Cauliflower pinwheel:-----
- 200 gm Cauliflower
- 200 gm Paneer
- 1/2 teaspoon Black pepper powder
- 4 tbsp All purpose flour
- Salt as per taste
- For gravy:-------
- 3 table spoon Ghee
- 2 Onion chopped
- 1 Tomato chopped
- 6 Cashew nuts
- 3 Dry red Kashmiri red chilli
- 5 Garlic clove
- 1 Green Chilli
- 1/2 Inch ginger
- 1/2 teaspoon Cumin seeds
- 1/4 inch Cinnamim stick
- 2 Green cardomon
- 6 Black pepper
- 1/4 teaspoon Javetri
- 1 pinch Sugar
- 2 drop Kewra essance
- 2 tablespoon Fresh cream
- 1/4 cup Milk
- to taste Salt
- Dry spices:------
- 1/4 teaspoon Red chilli flakes
- 1/2 teaspoon Kitchen king masala
- 1/4 teaspoon Turmeric powder
- 1/2 tsp Garam masala powder
- 1/2 teaspoon Kashmiri red chilli powder
Steps to make to make Cauliflower Pinwheel Gravy in Awadhi Style
- Boil cauliflower in water for 5 minute and darin it's water on kitchen towel. Grind it. Grind paneer also.



- Paneer and cauliflower put in a plate then add pepper powder, salt and maida to it and mix them all together to make a dough.



- Soak Cashew nuts and kashmir red chilli for 30 minutes then make smooth paste.


- Take a pan add ghee, add jeera, black pepper, dalchini, javitri, Elaichi to it, now add onions, green chilli,, ginger garlic cook it then tomatoes. Cool them and make a paste.



- Take pan. Pour oil in pan. Add grinded paste, cashews nut chilli paste, all pawder spices, sugar and salt in it. Mix it well then let it cool down.



- Take the paneer cauliflower daugh and roll it, then spread some prepared spice over it.


- Now roll it and then cut it a little bit thicker. Your cauliflower roll is ready.


- Then add 2cup water and salt. Cook it. Now add kasuri methi, kevra essence, fresh cream.



- Slowly add cauliflower roll in garvy and cook it for 5 min.

- Serve it hot with paratha, roti or rice.
